The other night we were talking about food, probably while eating food and we realized we have not had shish kabobs in like, forever. They’re one of the perfect summer foods because you can cook it outside instead of heating up the kitchen. They’re easy, tasty, and thankfully our kids dig (trading) vegetables. On it went to list of dinners to make, and it’s perfect for a Meatless Monday or Kids Cook Monday meal!

Not sure where summer has been all summer, but the kids are back in school and hello – HOT WEATHER! Who wants to cook inside when it’s hot outside, not me – not anyone here! Ah-ha the grill! Shish kabobs, veggie skewers whatever you call it are super easy to make with lots of room for variety.

Kid Sized Kitchen Work

There’s some perfect kid-sized jobs in the kitchen, and washing mushrooms is one of them. All the dirt comes off easily and the mushrooms don’t drown in water.

Fill a big bowl of water, drop a few mushrooms in the water – give them a swish and a swirl, and place on a bowl or plate with paper towels. My girls love doing this, and occasionally a kitchen brawl will break out over who gets to do the mushrooms. Any extra mushrooms that aren’t used should go into a brown paper bag in the fridge.

Next, cut up some vegetables. Go crazy try tomatoes, onions, peppers (of all colors), zucchini, and mushrooms. Gently push the vegetables onto metal or bamboo skewers. (Get the older kids in on the action, but be careful of the sharp ends!) Drizzle with a bit of olive oil and season lightly with salt and pepper. Mix it up with any seasoning you want. Feeling cajun? Try some cajun seasoning. Easy right? Cook on the grill, or a grill pan for a few minutes on each side.
