Walker’s Shortbread sent me a variety of their shortbread products for product review and recipe development for the upcoming holiday season. I received three different products (Raspberry Thins, Stem Ginger Shortbread and Shortbread Rounds). Since I normally do sweet recipes, I thought I would give a savory recipe a try with the Walker’s Stem Ginger Shortbread I received.

I opened the package of Stem Ginger Shortbread to see what it tasted like, and I was taken aback by how subtle the ginger flavor was. The shortbread was buttery and moist, flecked with pieces of stem ginger. This got me thinking.

My husband made some Chicken and Apple bites a few months ago that we all really enjoyed, and I thought since ginger and chicken go so well together I’d substitute the bread crumbs in the recipe with the shortbread. I have tried all sorts of substitutions for breadcrumbs in the past, so why not shortbread? For whatever reason I thought I would give it a go and try my new recipe with ground turkey instead of chicken.

They were tasty, unique and well received by our friends Fotocuisine whom we shared with. Thanks for being our guinea pigs!

Ginger Turkey Bites

Yield: 24 more or less depending on size

  • Food processor
  • Canola oil to fry
  • Flour and breadcrumbs for coating
  • 2 cups Ground Turkey (leanest you can find)
  • 1 apple peeled and grated
  • 1/4 cup red onion, chopped
  • 1 tablespoon dried Italian herbs
  • 1 teaspoon powdered ginger
  • Pinch of salt
  • 3/4 cup of finely ground Walker’s Stem Ginger Shortbread (approximately 4-5 rounds)
  • 1 tablespoon of chicken stock
  • Optional: Favorite Asian dipping sauce (Duck, Plum etc.)

Directions

  1. In a food processor, finely grind about 4-5 Walker’s Stem Ginger Shortbread. Measure 3/4 cup of crumbs and place to the side.
  2. Wash, peel and core an apple. Using a grater, finely shred the apple into a clean kitchen towel/cheese cloth/paper towel. Squeeze and press all the excess moisture out.
  3. To the food processor add: ground turkey, chopped onion, apple, ginger, herbs, salt, stock and shortbread crumbs. Pulse until well combined.
  4. Heat a few tablespoons of oil over medium heat while portioning and gently shaping together bite sized balls. (Suggested #40 portioner  1 1/2 tbs).
  5. Lightly/roll coat balls in a mixture of flour and breadcrumbs. About 1/4 cup flour, 1/4 cup bread crumbs. Adding more flour as needed.
  6. Cook turkey bites 6- 8 minutes, or until golden brown all over. Remove and drain on paper towels, serve immediately or reheat for about 20 mins in a 350 degree oven.
  7. Serve with or without your favorite asian style dipping sauce.
