Dave and I recently celebrated our 10th wedding anniversary and I’ve always wanted to recreate some of the culinary moments we remember from our wedding.

The best part of all this was our oldest child thought she was going to a wedding and invited her school friends, teachers etc. We tried explaining what an anniversary was, but it was too cute watching her get all excited to see ‘the bride AND the groom’ and how she wanted to kiss them and wear a fancy dress.

It was ten years ago when Dave and I got married. We had the most amazing almond and raspberry wedding cake by Lincoln Bakery here in Pittsburgh. I gave thought to going back to the bakery to get a small cake done, but decided it was ‘more from the heart’ if I made it myself.

Cake

I used an “Glazed Almond Bundt Cake” recipe I found on AllRecipes.com that I’ve used before. It’s a fabulous flavor and instead of making in a bundt pan I just used a cake pan. I also I halved the recipe so we wouldn’t have too many leftovers, hence the half moon cake shape.

Icing

Dave LOVES buttercream preferably one that uses REAL butter and of course who doesn’t like BUTTER! I found “Simple Buttercream Frosting” – again on AllRecipes that I tweaked to use real butter instead of the shortening. I tried to color the icing burgundy because we had burgundy colored flowers, but for whatever reason it just ended up looking more purple.

Filling

This was the easiest part of all, and tasty by itself. I love using pudding as cake filling. Open a single serving pudding cup and add in some frozen raspberries and mix! there you go – DONE! I bet it would make a tasty frozen raspberry vanilla pudding pop too! (hmmm…)

Dave surprised me by coming home from work early while I was knee deep in decorating the cake. Since the stairs from the garage enter the kitchen, I told Dave to keep his eyes closed when he got to the kitchen – and I hoped he wouldn’t tumble down the stairs. Our oldest daughter was helping me work on the cake, but then went in the other room to play/keep my husband occupied. She came back in the kitchen and said ‘WOAH! That’s a beautiful CAKE with purple …. flowers? And a TEN ON IT!’ Well, there went the surprise.* (She kept saying the past few days she asked what a secret was, and well of course it was a surprise because she didn’t know what we were making so OF COURSE she couldn’t tell anyone…..)

Dinner

At our reception we had the typical wedding buffet. Unfortunately we don’t remember much of what we had, but there was probably rigatoni, salad, bread, fried shrimp etc etc and the Pittsburgh Cookie Table! Dave did get us some food to eat, but most of our time was spent mingling. Since we had so little to eat at our own reception, room service at the Renaissance Hotel stuck out in our minds. Dave ordered a really yummy cheeseburger and I opted for a steak wrap – no champagne and fruit tray for this happy couple! The meal even came with those mini Heinz Ketchup and mustard jars! (still squeeing over their cuteness). It was heavenly after a long day! With this memory in mind I decided to make all of us steak wraps for dinner, and bumped up the vegetable count too.

Steak Wraps

  • Sauteed onion, mushroom and variety of green/yellow/red peppers.
  • Fiber One Garden Vegetable wrap (30% of your DV of fiber, and they’re a cool green color too!)
  • One cooked Steak-Um
  • Optional : Shredded cheese, mayo, ketchup, spicy brown mustard.

Wedding Anniversary Dinner & Dessert

Warm the wrap for a few seconds in the microwave. Spread the condiments on the wrap. Place Steak-Um in the middle, add some of the pepper mixture. Roll and enjoy!

The Baked Sweet Potato Fries are courtesy of a Paula Deen recipe. One of the few recipes that doesn’t require a stick of butter. The kids devoured these!

It was great re-living our wedding day with another tasty meal. Bring on many more years of culinary delights, love and fun in the kitchen!
