Beets, beets, BEETS! The beets from the garden have been awesome, and the girls have been loving them too. We harvested our first beets just after the Fourth of July per the seed’s recommendation. Beets are an amazing vegetable packed full of folate, antixodiants and lots of vitamins and minerals. You need to be eating this this beautiful food! The first time we had them, they were roasted on the grill; however, they were still a bit hard to eat. Next I had the brilliant idea to cook them in the pressure cooker, they turned out much, much better.

How To Cook Beets

We’ve tried, roasting, boiling (which works, but takes forever) and then finally pressure cooker! Give your beets a good scrub, trim the ends off if you like and put into a pressure cooker with about 2 cups of water. Once the vent starts rocking, cook for 8-10 minutes. Slip the skins off, slice and enjoy!

Here’s a few ways we’ve tried them.

I was hungry for asian food, so I was wondering if there were any asian beet recipes and bingo! We had this with leftover grilled pork loin and fried rice:

Recipe adapted from: A Little Bit Burnt 

  • 3 Tbsp. soy sauce
  • 3 Tbsp. white vinegar
  • 1 Tbsp. canola oil
  • 2 Tbsp. sugar
  • 1/2-1 tsp. Sriracha, depending on your taste for heat
  • 1 large clove of garlic, finely minced (or garlic powder)
  • 1 scallion, thinly sliced
  • 1 carrot julienne or ribonned
  • 4-6 beets

Whisk ingredients together, adjust flavors as needed.

I used quite a bit less oil than the original recipe and added a carrot for color and more veggies. The longer the mixture sat, the pinker it got. The carrots were the same color as the beets the following day. Great dish cold or warm.

Beets in a Salad Beet and Feta Salad

Cook beets to your liking, slice and serve with feta or goat cheese on your favorite salad greens. So far it tastes great with a sweet vidalia dressing or greek style dressing.

Eat the Beet Greens

If your beet leaves aren’t too bug eaten, try some of the small tender leaves in a salad wherever you might use spinach. I quickly sauteed some greens had with breakfast one morning as well. Very much like spinach, but tasted like a beet.

Slice ’em Up

Of course just cooked and sliced beets by themselves are a great addition to any meal. Enjoy!
