Buffalo chicken and blue cheese are a match made in heaven, but the downfall of this tasty treat is that it is usually messy, very messy! Most places if you order a Buffalo Chicken sandwich it is served with blue cheese or ranch dressing, blue cheese crumbles, or some other cheese (American? What – come again?) The dressings are messy and get everywhere, the crumbles roll everywhere if not melted and it’s uneven and well, come on if you’re going to use cheese it should be blue cheese!

In one slice of cheese, Castello Burger Blue Cheese solves all those problems! The creamy slice of strong blue cheese is a uniform thickness and fits on a standard size sandwich bun with enough to hang over the edges. The meltage factor was really good in that it did not melt completely into the sandwich, but melted enough to keep everything together and you could still see and taste it.

The Castello Burger Blue Cheese is a quality slice of blue cheese, there is no doubt when you taste it. That said, we had enough chicken and plenty of cheese to have this meal for two nights, and the first night we used a whole slice of cheese = Good, but very overwhelming to the overall sandwich. The second night, we opted to use half a slice and it was perfect in taste and coverage.

Cost?

I was provided with a $6 coupon for this particular package of cheese, but at Giant Eagle it cost $7.99. Other reviewers paid $4.99 and up, so depending on where you live or shop your price may vary. The price is just a bit more expensive than buying a wedge of the same style of cheese. The slices are convenient and much less work than trying to get crumbles onto a sandwich.

Cheesy Tip

Remove your cheese from the refrigerator about 15 minutes before topping. It is easier to keep a slice of slightly room temperature cheese vs. cold slices, and it tastes better! Do not be surprised if some of the slices fall apart even with the paper separators.

Ingredients

Chicken

  • 1-1.25 lbs Boneless Chicken Breasts
  • Wax or Parchment Paper
  • 1/3 c flour
  • Salt
  • Pepper
  • 1 egg
  • 2/3 c Panko Bread Crumbs
  • 2 tsp Paprika
  • 3 tbs Oil Canola or Vegetable

Sauce

  • 3/4 c Cayenne Pepper Sauce Frank's RedHot
  • 1 tbs Melted Butter

Sandwiches

  • Sandwich Buns
  • Castello Burger Blue Cheese

Instructions

  • Prepare three dishes with the following:
    Dish 1: Season flour with salt and pepper
    Dish 2: Whisk egg
    Dish 3: Panko seasoned with Paprika
  • Pound each chicken breast between two pieces of wax or parchment paper.
  • Place chicken breast in flour and coat both sides. Then dip chicken in egg and coat both sides. Allow egg to drip off a bit, then coat all sides with Panko breadcrumbs. Set aside.
  • Remove Castello Burger Blue Cheese from refrigerator, and allow to warm to room temperature.
  • Heat oil in a large skillet, and cook chicken breasts approximately 7 minutes a side. If the chicken is not cooked all the way through, put in oven at 350 degrees for a few minutes, or until chicken reaches an internal temperature of 165 degrees.
  • Remove chicken from skillet (or oven) and let rest for a few minutes. Cut breasts in half.
  • Mix together Frank's RedHot and butter and gently coat chicken breasts in sauce. Tap gently to remove excess sauce, place on bun and top with 1/2 to whole slice of Castello Burger Blue Cheese. (Pictured with whole slice.)
