It’s not a basil plant it is a pesto plant, or bearnaise plant (tarragon), and cilantro for salsa, chimichurri etc. Today I harvested some cilantro and green onion to make one our kids absolute favorite green-light food: Guacamole!

Shortly before we left Florida we jumped on the avocado train, we had it in everything – because they were very reasonably priced. All my 3 year old daughter at the time wanted was guacamole (sometimes she’d share with the rest of us), and it was super easy to make. Who am I to say no to a cheap and healthy food? Then sticker shock sent in soon as we moved back to Pennsylvania, when the price of an avocado and cilantro was double and triple what we paid in Florida. So now we buy super-green avocados when they go on sale for 50 cents each and wait a few weeks for them to ripen.

Fast forward to summer, when the perfect storm of herbs, fruits and vegetables combine. Our cilantro is at a pretty good size to start harvesting and in my opinion a must have in guacamole. Soon the cilantro will find a home in salsas! I like to keep my guacamole simple, salt, lime, and mashed avocado. I like to think that ‘marinating’ the cilantro with the lime, salt and green onion allows all those flavors to be tasted throughout the guacamole, instead of hitting just a taste of cilantro here or there. Feel free to add in a pinch of garlic powder or some green onion while you’re at it too!

Guacamole

Takes less than ten minutes to an awesome and simple guacamole. Serve immediately or cover tightly with plastic wrap pressed against the guacamole. The lime juice helps to slow the browning of the avocado in the mixture.

Ingredients

  • Half of Lime
  • 1 Avocado
  • Salt
  • 1 Tbs Green Onion chopped
  • 1 Tbs Cilantro chopped
  • Garlic powder optional

Instructions

  • Add green onion, cilantro, salt and lime to a bowl. Gently mix together.
  • Prepare one ripe avocado by slicing in half, removing pit, and scooping the insides into a bowl with lime juice.
  • Mash together. Add more lime juice or salt to taste.
  • Cover tightly and press plastic wrap against the guacamole if it will be awhile until served, otherwise, serve immediately!
