Pre-heat oven to 350 degrees.
Spray two cookie sheets with non-stick cookie spray, OR line with parchment paper.
In a mixer cream together: pumpkin, sugars, butter, egg and vanilla.
In a small dish, dissolve baking soda in the milk and set aside.
In another bowl, sift together salt, flour/s (or ground oatmeal), baking powder, cinnamon, cloves and nutmeg.
Add baking soda mixture to flour mixture and stir to combine.
While mixing, slowly add the flour mixture to the pumpkin mixture. Mixing until just combined.
NOTE: Do NOT overmix the batter, otherwise it will become tough.
Gently mix in nuts and chocolate chips to batter.
Drop by rounded spoonfulls (or use a cookie scoop) onto prepared cookie sheets.
Bake 10-12 minutes or until lightly browned.
