King Arthur ran a baking challenge with a list of ‘Extraordinary Breads.’ It seemed like a fun way to explore new recipes, and all entries had a chance to win. So away we go!

Butterflake Herb Loaf

The first recipe I tried was the “Butterflake Herb Loaf.” This was an instant hit and was like a garlic crescent roll. Time will tell if it replaces garlic bread in our household!

Persian Flatbread

Next up was the “Persian Flatbread.” I substituted pumpkins seeds for the sesame seeds due to food allergies and it turned out quite good. The saltiness of the pumpkin seeds was a nice touch.

Then I decided to tackle the “Cinnamon Star Bread.” This was the one that everyone focused on when I asked them which of the Extraordinary Breads I should make. It looked pretty intimidating to make! It turned out to be quicker and easier to make than Cinnamon Rolls, and was a big hit. I have made it twice, and it is great.

Scaccia

Since quarantine started, we’ve been making homemade pizza once a fortnight. For the challenge, I made the ‘Scaccia‘ or ‘Lasagna Bread’ instead of our regularly scheduled pizza. Yet again it was an excellent bread and made a great lunch. However, since it uses the same ingredients as pizza, we decided that we’d rather have pizza instead so this one did not make the cut to make it into our regular rotation.

Cinnamon Conchas

One of our dear friends recently bought a house, so we decided to make some bread for them and drop it off. For them I made the “Cinnamon Conchas.” A brioche like dough with a cinnamon topping. I didn’t get too creative with the designs on top since that is not my forte. I preferred the taste of the Cinnamon Star Bread, and I enjoyed making it more than these. They will make it into our recipe book though.

Olive and Onion Fougasse

The final bread I made was the “Olive and Onion Fougasse.” I selected this one more for the shape, but it was fantastic! So good dipped in olive oil and the entire family loved it! This will be one of those breads that I’ll want to make again and again and plan a dinner to complement the bread rather than the other way around.

I loved King Arthur’s Extraordinary Bread Challenge and there are still a couple of the breads I’m going to try even though the contest is over. It was fun to experiment with techniques and flavors I normally wouldn’t do. I hope they run challenges like this in the future and you can be sure I’ll participate!
