Then, we have more beets. Some of the beets were the size of softballs and I still have a few rows left…a lot left actually. Thankfully, we have not grown tired of the beets or their greens yet.

Tonight, we ate some beets for dinner in an pickled asian style, and the rest I will use make into beet puree! I am looking forward trying beet puree in ….drumroll….a red velvet cake! I have looked at a couple recipes for beet cakes and red velvet cakes with beets, but haven’t settled on one yet, but soon as I do it’ll be here!

Beet Harvest

Beets ready to get cooked in the pressure cooker. The skins slide off once their done cooking, and you are left with these gorgeous deep burgundy colored beets. The camera doesn’t do justice to their color! (Trust me, I’ve tried to get a shot!)
