My second favorite thing about growing hardneck garlic is the scapes. The scape is the flower of the garlic. If the scape is not removed it will flower, and take away energy from the plant that could go to growing a great bulb of garlic. They look like a green onion, have a nice light, but still noticeably hot garlic flavor.

The easiest way to make us of it is to puree it with a bit of olive oil in a food processor. From there, you can use it in a variety of dishes.

  • Use a cookie scoop or measuring cup to portion, and flatten for freezing. Gently defrost in microwave as needed.
  • Mix it with some mayo, salt, and pepper for a nice sandwich spread or vegetable dip.
  • Mix with sour cream, salt, and pepper for a super delicious baked potato topping. If you thought chives, or green onions on a baked potato were amazing, try scapes!
  • Add some scapes into your favorite pesto recipe.
  • Throw a portion of scapes into rice, soups, sauces and more.

Preparation

Remove the flower portion, it is edible, but I do not like the flavor. Chop the scape into small pieces to make it easier to puree in the food processor.
