Happy Fourth of July! This is one of our favorite summertime picnic treats. Use your favorite fruits, sometimes I like kiwi in it. I prefer to skip the fruit glaze in my recipe. Take a shortcut with refrigerated cookie dough or make your own!

Red, White and Blue Fruit Pizza

Ingredients
  • 1 pkg refrigerated sugar cookies (or make your own)
  • 1 pkg (8 oz) cream cheese, softened
  • ⅓ cup sugar
  • ½ teaspoon vanilla
  • 1 cup halved or quartered fresh strawberries
  • 1 cup fresh or frozen blueberries
Instructions
  1. Heat oven to 350°F. Grease 12-inch pizza pan or spray with cooking spray.
  2. In pan, break up cookie dough; press dough evenly in bottom of pan to form crust.
  3. Bake 15 to 20 minutes or until golden brown. Cool completely, about 30 minutes.
  4. In small bowl, beat cream cheese, sugar and vanilla with electric mixer on medium speed until fluffy.
  5. Spread mixture over cooled crust.
  6. Arrange fruit over cream cheese.
  7. Refrigerate until chilled, at least 1 hour. Cut into wedges or squares. Cover and refrigerate any remaining pizza.
