One of the best things about summer is fresh salsa made from ingredients we grow at home. We have lots of great herbs growing on the deck and a crazy amount of tomatoes from the garden so whenever possible, we have salsa fresca (fresh salsa).

Normally when I make salsa I would dice the tomatoes and bypass the food processor, but the girls said my salsa wasn’t ‘real salsa,’ you know the kind in a jar where it’s a bit finer? Well, I decided I’d give the salsa a whirl in the food processor and voila, everyone is eating REAL salsa now. It’s an easy recipe and you can tweak it to your textures and tastes. Looking forward to using our own citrus and garlic next year!

Salsa Fresca

  • 1-2 cups of diced tomato (Remove seeds if you like, but the pulp around the seeds has lots of flavor)
  • 1 tablespoon / Squeeze of lime (preferred) or lemon
  • Sprinkle of kosher salt
  • Splash of olive oil
  • Garlic minced
  • Cilantro (if you have)
  • 1 tablespoon Diced green onion or chives

Mix all the ingredients together by hand or pulse to preferred consistency in food processor. Let sit for about 15 minutes before serving. Best if used on the same day.

Try with some strained homemade yogurt for sour cream!

Fresh Salsa

My daughter even had it for lunch one day in one of her Easy Lunch Box Mini-Dippers (buy). The Mini-Dipper kept all the salsa safely inside to/from school (did not eat it all). You need these!
